Core Coffees: Consistency from Origin to Roast

When it comes to buying green coffee, maintaining consistency in cup profile can be a real challenge for roasters. With so many different flavors and crops that vary due to climate conditions, offering the same coffee to clients and consumers can become difficult.

With that in mind, Ally developed the Core Coffees program: a curated selection of eight coffees from some of the world’s key origin countries: Brazil, Colombia, Costa Rica, Ethiopia, Guatemala, Honduras, Mexico and Peru.

Core Coffees are named after the national tree of each origin, celebrating the culture and natural environment from which they come. Our green coffee buyers carefully select lots that represent the traditional cup characteristics of each region, always prioritizing consistency from lot to lot, and from one crop year to the next, resulting in coffees that both roasters and drinkers can count on, check it out!

 

Paubrasil - Brazil

Paubrasil is sourced from coffee producers certified under the Região Cerrado Mineiro Designation of Origin program in Brazil, the world’s largest coffee-producing country. Rather than representing a single farm, this coffee is curated to highlight the distinct identity of Cerrado Mineiro, shaped by its unique combination of climate, soil, terrain, elevation, and the expertise of its producers. Each lot is fully traceable to the farm where it was grown through a QR code provided by the Designation of Origin program. This sourcing approach allows us to offer a consistent supply of coffee with a clean, balanced, and versatile profile that showcases the character of the region year-round.

The PauBrasil was declared Brazil’s national tree in 1978. Known for its dense, red-hued wood that gave the country its name, it once covered large areas of the Atlantic Forest. Today, it symbolizes resilience, cultural identity, and the enduring link between Brazil’s natural heritage and its history.

 Guanacaste – Costa Rica

Guanacaste is sourced from smallholder producers across multiple coffee-growing regions in Costa Rica. Rather than coming from a single origin, this coffee is curated to represent the best of the Costa Rican high commercial profile. Our sourcing team selects coffees from our existing network of producers based on quality, consistency, and seasonal availability, allowing us to maintain a reliable supply throughout the year. This approach enables us to highlight the diversity and richness of Costa Rica coffee while ensuring Guanacaste remains true to its clean, balanced, and approachable flavor profile.

The Guanacaste was declared Costa Rica’s national tree in 1959. Known for its broad canopy that offers shade and shelter, it symbolizes protection, community, and the country’s commitment to preserving nature and collective well-being.

Cup profile: Mandarin, Lemon, Caramel, Midbody, Nuts.

Growing Region: Various Growing Regions (Los Santos: antiguo Tarrazú).

Process: Fully Washed, sun/mechanical drying.

Varieties: Mainly Caturra, Catuaí, Obatá, Villa Sarchi, Catiguá.

 

Acacia - Ethiopia

Acacia is sourced from smallholder producers in the Guji region of southern Ethiopia. Rather than representing a single woreda, this coffee is curated to highlight the distinctive identity of Guji, shaped by its high elevations, fertile soils, and traditional farming practices. Producers deliver ripe cherries to local washing stations, where coffees are carefully depulped, fermented, and washed before being dried on raised beds. This collective approach reflects the central role of community in Ethiopian coffee production while ensuring consistency and reliability.

The Acacia is deeply rooted in Ethiopia’s landscape and culture, thriving across the savannas and highlands. Valued for its shade and resilience, it plays a vital role in rural life, providing shelter, firewood, and soil enrichment. Beyond its practical uses, the acacia symbolizes endurance and connection to the land, standing as a familiar presence in the birthplace of coffee.

Growing Region: Guji, Ethiopia

Process: Fully Washed, sun-dried on raised beds

Varieties: Ethiopian Heirloom

 

Ciprés - Mexico

Sourced from indigenous coffee-producing communities in the Tenejapa region of Chiapas, this lot reflects the distinct identity of Mexican coffee. The region’s high elevations, volcanic soils, and rich cultural heritage shape both the land and its coffee. Producers cultivate varieties including Caturra, Typica, Costa Rica, and Marsellesa, all processed using washed method to preserve clarity and highlight regional character. Harvested at altitudes between 1,000 and 1,350 meters, the coffee undergoes overnight fermentation before being sun-dried on patios for 12 to 18 days.

The Ciprés was officially declared Mexico’s national tree in 1921. Revered since Aztec times and commonly planted near lakes and canals, it symbolizes endurance, wisdom, and connection to water and community life.

Ceiba - Guatemala

Ceiba is sourced from smallholder producers across multiple coffee-growing regions in Guatemala. Rather than coming from a single origin, this coffee is curated to represent the best of the Guatemalan high commercial profile. Our sourcing team selects coffees from our existing network of producers based on quality, consistency, and seasonal availability, allowing us to maintain a reliable supply throughout the year. This approach enables us to highlight the diversity and richness of Guatemala coffee while ensuring Ceiba remains true to its clean, balanced, and approachable flavor profile.

The Ceiba was declared Guatemala’s national tree in 1955. Sacred to the Maya and revered as a bridge between the earthly and the spiritual, it symbolizes strength, continuity, and the deep cultural roots of the nation.

Growing Region: Various Growing Regions (Mainly Huehuetenango).

Process: Fully Washed, sun/mechanical drying.

Varieties: Mainly Caturra, Catuaí, and Pache

El Pino - Honduras

El Pino is sourced from smallholder producers mainly in the Santa Bárbara region of Honduras, an area renowned for its high elevations, volcanic soils, and ideal microclimates for coffee cultivation. Rather than representing a single farm, this coffee is curated to highlight the distinct identity of Honduras, where generations of producers combine traditional practices with deep local knowledge to bring out the region’s character. Producers deliver ripe cherries to community mills, where they are carefully processed and dried, ensuring consistency and quality year after year. This sourcing approach allows us to offer a reliable supply of coffee with a clean, sweet, and fruit-forward profile that showcases the richness of Honduran coffee.

The Pine was declared Honduras’s national tree in 1928. Abundant across the country’s mountains and forests, it is valued for its strength, versatility, and importance to the local economy. Beyond its practical uses, the pine symbolizes vitality, endurance, and the deep-rooted connection between the Honduran people and their natural landscapes.

Palmera - Colombia

Palmera is sourced from smallholder producers across multiple coffee-growing regions in Colombia. Rather than coming from a single origin, this coffee is curated to represent the best of the Colombian high commercial profile. Our sourcing team selects coffees from our existing network of producers based on quality, consistency, and seasonal availability, allowing us to maintain a reliable supply throughout the year. This approach enables us to highlight the diversity and richness of Colombian coffee while ensuring Palmera remains true to its clean, balanced, and approachable flavor profile.

The Wax Palm was declared Colombia’s national tree in 1985. Native to the Andean region and thriving in the cloud forests of the Cocora Valley, it symbolizes resilience, spirituality, and the deep bond between nature and cultural heritage.

Growing Region: Various Growing Regions (Huila, Antioquia, Tolima, Cauca, Caldas).

Process: Fully Washed, sun/mechanical drying.

Varieties: Caturra, Castillo, Colombia, Cenicafé 1.

Quina – Peru 

Quina is sourced from smallholder producers across the most important coffee-growing regions of Peru, such as Cajamarca and Cusco, a country recognized for its diverse landscapes and rich coffee heritage. This coffee is curated to represent the distinct identity of Peruvian coffee, shaped by high elevations, fertile soils, and the traditions of indigenous communities. Producers deliver their harvest to local mills where the coffee is fully washed and sun-dried, reflecting both ancestral knowledge and regional character. This sourcing approach allows us to offer a consistent supply of coffee that highlights the clean, sweet, and balanced qualities for which Peru is celebrated.

The Quina tree was declared Peru’s national tree in 1975. Native to the Andean cloud forests, it is best known as the source of quinine, a compound historically used to treat malaria. Beyond its medicinal value, the quina symbolizes healing, resilience, and the deep connection between Peru’s natural heritage and its cultural identity.
